Fagan Eats Paleo Recipe: Sweet and Salty Plantain Bark
I have a love-hate relationship with this recipe. It is probably one of the yummiest things I've ever made. Seriously. But the problem is--I can't eat just one piece! I keep going back for more. This stuff is dangerous. My boyfriend and I keep calling it Paleo crack. Read further only if you dare...

Jamie's Thoughts: A Paleo-ish Thanksgiving
Having lived far from my family for over a decade, navigating the holidays in unfamiliar and sometimes uncomfortable circumstances can be hard. Showing up at a friend's family Thanksgiving dinner. Or going to a current boyfriend's family gathering, where the uncertainty of the direction of your relationship may be compounded by the discomfort of finding your place in the potential new family in-law.

Fagan Eats Paleo Recipe: Paleo Chocolate Chip Pumpkin Pie Muffins
Fall weather has finally descended on the Bay Area after an uncomfortably warm September and October. This is my favorite season--hands down. I just love the chill in the air and the leaves changing colors. Something about it makes me feel all warm and fuzzy inside.

Fagan Eats Paleo Recipe: Party Guacamole
This is my most favorite recipe to take to parties. It's quick, easy, and simple. Oh and award winning--that is if you count a guacamole contest at a friend's apartment. Hey--the competition was steep and I prevailed! Haha. I won an assortment of Trader Joe's goodies and a tote bag.

Jamie's Thoughts: When You're Going Through Hell...
There’s this saying you may have heard of, ”When you’re going through hell, keep going...” by Winston Churchill. Well, it may not have been from Winston Churchill. It's origin is uncertain. I learned it in the context of working in family law; and it was advice my boss doled out to divorcing clients often.

Fagan Eats Paleo Recipe: Lemon Butter Shrimp with Paleo Pesto "Sauce" and Spaghetti Squash
I just love it when recipes just sort of write themselves. And that's pretty much what happened with this recipe. It looks pretty luxurious folks, but really, this dish is so simple to make.

Fagan Eats Paleo Recipe: Paleo-Friendly Basil Pesto
I'm not reinventing the wheel here. I'll say that. Rather, i'm painting the wheel pretty pastel colors and bedazzling it. There are about a thousand different pesto recipes out there. But hey, they aren't all Paleo, right?

Fagan Eats Paleo Recipe: Basic Roasted Spaghetti Squash
This really isn't a recipe. It's more of like a "how to" cook something, you know? But as I begin to build recipes using the basics, having these instructions down is kinda necessary. Seems a little unfair for me to assume you all just know how to roast up a spaghetti squash. I know I didn't before I started Paleo.

Fagan Eats Paleo Recipe: Paleo Duck Confit
A decadent meal great for a special occasions. |
I've been on a big duck kick lately. It seems to give me so much energy, so it's becoming my go-to protein of choice when I want to make something a little special. Well--that and I just like experimenting with new types of food. Ever since I vacationed in Paris in February, I've been dying to recreate some of the amazing duck dishes enjoyed there. And so, I endeavored to re-create duck confit.

Fagan Eats Paleo Product Review: Exo Paleo Protein Bars with Cricket Flour
Exo Protein Bars with Cricket Flour |
I have so many recipes that are just floating around in my brain and not enough time get them down and photographed. Some things I've got in the works are a simple duck confit, seared duck breast with fig sauce, and lemon butter shrimp over spaghetti squash with a broccoli/cauli puree "pesto" sauce. I'm finding that eating duck is giving me tons of energy. I always feel great after I have it, so I'm trying to incorporate more of it into my diet. I'm so looking forward to getting these recipes down and onto the blog!

Fagan Eats Paleo Recipe: Mussels in a Thai Style Broth
The inspiration for this dish came from a restaurant that my boyfriend and I frequent. Sound like a familiar theme? Haha. Yep. I love trying new things and then trying to recreate them at home. Anyway, this restaurant serves the best mussels in a coconut milk and lemongrass broth. So, yummy! So, I thought I'd give it a go at home.

Jamie's Thoughts: The Girl with the Blue Plastic Mitt
Have you ever tried to remember the exact moment you started to define yourself? That instant when you "knew" you were decidedly one thing and not something else. It's hard to remember, isn't it? I know I can't remember. But at some point, I decided I was not an athletic person. That definition dictated a whole host of choices in my life. However, my recent experience in joining a boot camp has turned everything I thought I knew about myself upside down.

Jamie's Thoughts: What to do When You're Sick on Paleo
Comfort foods you normally eat when sick and have a fever aren't Paleo. Saltine crackers. Nope. Chicken noodle soup. Nah. Not that either. Even orange juice and ginger ale don't work on Paleo. While bacon might be wonderful for adding flavor to so many dishes, it isn't something you'd want to eat when you are in the throes of a raging, appetite -suppressing fever. So, just what should you eat when you are sick and trying to stay Paleo?

Jamie's Thoughts: Paleo is a Journey, Not a Destination

Jamie's Thoughts: I Gained and Lost Weight Eating Paleo -- What Gives?!
I'm not ashamed to admit that I came to Paleo to lose weight. I did. But I stayed for the nutrient-dense, healthy, happy, super energy-filled lifestyle it affords me. I feel great. But--I did not lose weight on Paleo, at least not at first.

Jamie’s Thoughts: Is Traveling Paleo? A Tale of Two Trips
Is traveling Paleo?! |
A couple weeks ago, I returned from my annual trip back East
for the holidays, and this time (finally!), I’m falling right back into my Paleo
routine. That’s probably because I never
abandoned it while I was on the trip.
But I’m getting ahead of myself here.
