Valentine's Day is one of my most favorite holidays. Why? Not for any of the reasons you may normally expect. And you may be wondering what any of this has to do with chocolate cream pie. Pie + Valentine's Day sounds like a recipe for love to me!

Fagan Eats Paleo Recipe: Party Guacamole
This is my most favorite recipe to take to parties. It's quick, easy, and simple. Oh and award winning--that is if you count a guacamole contest at a friend's apartment. Hey--the competition was steep and I prevailed! Haha. I won an assortment of Trader Joe's goodies and a tote bag.

Fagan Eats Paleo Recipe: Easy Peasy Pico de Gallo
Folks: Pico de gallo is so easy to make, it's almost illegal to buy it pre-made from the grocery store. Seriously. The few minutes you take to buy the fresh produce and chop the veggies yourself are paid back to you in fresh burst of flavor cool and spicy flavor. I love pico de gallo.

This recipe is oh-so delicious! I made it for Super Bowl Sunday and had to share. I adapted it from Eating for Idiots Barbacoa Recipe. If you are missing those regular trips to Chipotle since you've gone Paleo: Fear not. |

Fagan Eats Paleo Recipe: Sugar Cookie Dessert Cups
![]() |
| An indulgent treat! |
In the spirit of full disclosure, I did not intend to make this recipe. But, as can happen in life, I set out to make one thing and ended up with another. Sometimes you just have to go with it. I wanted to formulate a Paleo fortune cookie recipe. While I had some success, I just felt the recipe was too difficult to execute to share. So, I turned the situation around into something else. Thus, the Sugar Cookie Dessert Cup recipe came to life. These sweet and crunchy little dessert vessels can be filled with anything you desire--fruit, coconut whipped cream, a chia pudding--whatever you can imagine!
