Fagan Eats Paleo Recipe: Creamy Zucchini Soup or Puree

Enjoy a bowl of comfort.

I call this recipe Creamy Zucchini Soup or Puree because it could be either a soup or a puree. I find a bowl of this puree so comforting; and the leek, zucchini, marjoram combination is so delicious.

I've been making purees and soups a lot lately. Why? Because it's a great way to incorporate more veggies into your diet. I like to make a double batch on Sundays to use throughout the week. Easy to make, convenient to transport to work, or just to reheat with a meal. Topping with garlic salt and pepper really enhances the flavor of this soup. I hope you all enjoy.

My Story

My name is Jamie and I am a lawyer in California's Bay Area. Working in litigation is crazy, unpredictable, and stressful. And in my first couple years as a lawyer, my weight and energy levels yoyo-ed. I'd lose weight, but then I'd have another stressful few weeks because of drama in a case, and the weight would come right back on. I work in a profession where many turn to smoking, drinking, or drugs to deal with the toll that the work takes. But since learning about the Paleo lifestyle, I love what it does for my energy and sense of well-being. I love the way I feel, I love creating and trying new recipes, and I love the way the food tastes.

This blog is named after one of my two cats, Fagan. Fagan has asthma, and after switching him to a grain-free diet, he has much more energy and is now having far fewer asthma attacks. Yay for Paleo, even for kitties!

I find cooking and testing new recipes to be fun and relaxing. It helps to balance out the other chaotic and crazy attorney part of my life.

I hope that this blog opens up a dialogue on the Paleo way of life--our triumphs and tribulations, in addition to sharing recipes.
