Fagan Eats Paleo Recipe: Chocolate Chocolate Chip Mug Cake



What do you do when you have a wicked craving for chocolate, you've raided your cabinets, and there's just nothing to satisfy it?  You make a mug cake, of course!  
The other night I had a chocolate craving that would just not go away.  I considered heading out to the grocery store to pick something up, until I realized that I could whip something up myself.  

But I did not want to wait. I wanted immediate gratification.  That's where this magical mug cake comes into play.  Guys--this mug cake is actually really satisfying.  It takes care of the chocolate craving without making you feel gross afterwards or putting you into a sugar coma.  It's chocolate-y and cake-y and has melt-y chocolate chips in it. Yum!  This recipe can go from mixing bowl to belly in less than 6 minutes.  No joke.  

I'm having lots of fun experimenting with Otto's cassava flour.  I'm going to spend some more time working with it before I post a review.  But this recipe is just one example of my Paleo-friendly baking adventure with cassava flour!  Hope you all enjoy this super simple but rich and indulgent Paleo Chocolate Chocolate Chip Mug Cake.  --J

Paleo Chocolate Chocolate Chip Mug Cake

Ingredients (serves 1 t 2)
  • 1 pasture raised egg
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon olive oil
  • 1/8 teaspoon baking soda
  • dash salt
  • 2 tablespoons of high quality cocoa powder
  • 2 tablespoons of cassava flour (I use Otto's)
  • 1 1/2 tablespoons of dairy-free, semi-sweet chocolate chips
Instructions
Add wet ingredients to a medium sized bowl (egg, honey, vanilla, and olive oil) and whisk together.

Then add the baking soda and salt. Mix again.
Add the cocoa powder and mix until combined.

Then mix in the cassava flour one tablespoon at a time until well combined.

In a mug or a souffle cup, add about half the batter. Then sprinkle about 1/2 to 3/4 of the chocolate chips. Add the remaining batter on top and sprinkle remaining chocolate chips on top.

Microwave for 40 to 55 seconds until cooked through. Begin checking at about 30 seconds and keep microwaving in increments of 5 to 10 seconds until done. Check with a toothpick.

Grab a spoon and enjoy!
