Fagan Eats Paleo Recipe: Paleo Cauliflower Puree


I have always loved mashed potatoes.  Always.  Since mashed potatoes aren't Paleo approved, I'm on the lookout for acceptable replacements.  I've created a lovely velvety cauliflower puree that almost makes me forget about mashed potatoes.  Almost.  And it's super easy to make.  


Paleo Cauliflower Puree




1.  First, chop up the cauliflower florets.  




2.  Then, peel the garlic.  You can leave it whole or roughly chop it a little.  




3.  Then put it in the steamer, sprinkled with a little salt.  



After it's done steaming, you put it all in the blender with the butter and some chicken stock and puree until smooth.  Add salt and pepper to taste.  I'm currently working on variations of this puree with broccoli and other ideas.  So stay tuned.  Hope you enjoy!

Paleo Cauliflower Puree

COOK: 10-20 MINUTES

Ingredients
  • 1 large head of cauliflower (or two small)
  • 4-6 cloves of garlic
  • 3 T of grassfed butter
  • 1/2 cup chicken stock
  • salt and pepper

Instructions
  • Pour water in a pot about an inch deep. Place steamer insert in pot. Bring to a boil.
  • Core the cauliflower and cut into florets.
  • Peel and roughly chop the garlic cloves.
  • Sprinkle the cauliflower and garlic with salt.
  • Place the cauliflower and garlic into the steamer. Steam for approximately 12 to 14 minutes. Check the cauliflower after 12 minutes. A fork should easily go through it when it's done.
  • Then strain the cauliflower and garlic and then place the mixture in a blender or food processor.
  • Add the butter and some of the chicken stock. Begin to puree. Keep adding chicken stock until it becomes smooth.
  • Check for taste and add more salt and pepper if necessary.
  • Enjoy!
