Fagan Eats Paleo Recipe: Paleo-Friendly Basil Pesto


I'm not reinventing the wheel here.  I'll say that. Rather, i'm painting the wheel pretty pastel colors and bedazzling it.  There are about a thousand different pesto recipes out there.   But hey, they aren't all Paleo, right?  

As a recipe developer, it's necessary to have your base recipes down to develop others.  And pesto is one of them.  This recipe is how like to make Paleo pesto.  I enjoy the flavor and balance of ingredients of this particular recipe.

But you should know that you can take this recipe and make substitutions with other herbs and nuts you may have.  I often make a kitchen sink pesto at the end of the week using leftover greens and herbs and then cover it in oil and freeze for use later.  Pesto holds up very well in the freezer.   

This recipe is great with soups and Paleo noodle dishes.  Hope you all enjoy!

Paleo-Friendly Basil Pesto

This is a recipe for Paleo-friendly Basil Pesto.
Ingredients
  • 2 cups basil, packed
  • 1/2 cup walnuts
  • 4 cloves garlic
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste

Instructions
  • Place all ingredients in a food processor and process until smooth.
  • Add salt and pepper to taste.
