Paleo Sugar Cookie Dessert Cups
An indulgent treat!

In the spirit of full disclosure, I did not intend to make this recipe.  But, as can happen in life, I set out to make one thing and ended up with another.  Sometimes you just have to go with it.  I wanted to formulate a Paleo fortune cookie recipe.  While I had some success, I just felt the recipe was too difficult to execute to share.  So, I turned the situation around into something else.  Thus, the Sugar Cookie Dessert Cup recipe came to life.  These sweet and crunchy little dessert vessels can be filled with anything you desire--fruit, coconut whipped cream, a chia pudding--whatever you can imagine!

Sugar Cookie Dessert Cups

This is a recipe for Paleo Sugar Cookie Dessert Cups.
Ingredients
  • 1 pastured egg white
  • 1/8 t vanilla extract
  • pinch of sea salt
  • 2 T ghee
  • 1 T organic maple syrup
  • 1 T coconut crystals
  • 3 T cashew flour (or almond flour)
  • 2 T arrowroot flour

Instructions
  • Preheat oven to 400 degrees.
  • Grease a cookie sheet.
  • Add egg white and vanilla in a mixing bowl. Beat until frothy.
  • Add salt, ghee, coconut crystals, and maple syrup. Stir until combined.
  • Add arrowroot flour and cashew flour. Stir until all ingredients are combined and the batter is smooth.
  • Spoon batter onto greased cookie sheet. The batter will be runny and will spread out. Try to keep the batter in a circular shape about 3.5" wide.
  • Give plenty of space between cookies because they tend to spread out while baking.
  • Bake for 3-5 minutes. The edges should be browned to about 1/4 inch.
  • When they are done baking, remove with a spatula and place on a cool surface.
  • In order to shape into dessert cups, you must immediately begin to shape the cookie when they come out of the oven or they will harden.
  • Place the warm cookie into a muffin tin and use a spoon to press down and shape into a cup form.
  • Let cool and harden. Then fill with your favorite dessert treat--fruit, coconut whipped cream or anything else.
